Crispy Oven Roasted Chickpeas

Looking to up your salad game? These simple, crispy, oven roasted chickpeas are high in fiber and completely delicious!



This recipe takes next to no effort to make and is dangerously tasty! I love putting crushed cashews on top of salads to add a nice crunch and this is somehow even better.


All this recipe takes is:

  • 1 can of Chickpeas (or Garbanzo beans, as they are one and the same)

  • 2 Tablespoons of Olive Oil

  • Italian Seasoning (or any spices of your choice)


The first thing I did was preheat the oven to 400° Fahrenheit and set out a pan. I used a glass pie pan, but I have also used a rimmed baking sheet and that works just as well. You want to use something with edges that will keep the chickpeas from sliding off, as they might try and escape!



After opening and draining the can of chickpeas, I tossed them onto a clean kitchen towel. I then dried them and removed any visible skins. Drying the chickpeas is important if you want them to get crispy. If they are wet, they won't have the desired crunch when you take them out of the oven.


Once dried, I shook the chickpeas off of the towel and into their pan. I drizzled the olive oil onto them and sprinkled them with Italian Seasoning. I have also made these successfully with a mixture of different spices, including oregano, thyme, garlic powder and basil. I would highly recommend using garlic powder, it is the most delicious!


After topping the chickpeas with olive oil and spices they are ready for the oven! It takes about 20-25 minutes to roast them. Ten minutes into their cook time, it is a good idea to stir them to make sure they would be evenly roasted. When they are done, they will be a nice shade of golden brown.


I normally let them cool for 15 minutes or so before putting them on top of our salads. But if you would prefer to have warm chickpeas in contrast to the cold salad they would be ready after about 5 minutes.


These chickpeas spice up even the simplest of salads and are even great as a snack! We put them on top of our latest salad, consisting of romaine lettuce, apple slices, tomato and poppyseed dressing and it was a real hit! It makes the salad substantially more filling and keeps us full for much longer.
