Vegan 'Tuna Fish' Sandwiches

Looking for a plant-based option for tuna? Look no further! This recipe will give you what you want using chickpeas!
How to:
On the website, The Simple Veganista, they recommend a delightful spread of ingredients, but I found you only need a few to make this taste just right! It is perfect to snack on, put on toast, or in a mouthwatering 'tuna' melt.
All this recipe takes is:
1 can (14 oz) chickpeas
1 small lime or lemon
1/3 cup vegan mayo (I use Best Foods)
1 stick of celery
1 tsp garlic powder
1.5 tsp onion powder
a sprinkle of all-purpose seasoning (or another seasoning of your choice)
The first step in this process is to drain and rinse the chickpeas. After shaking out the water, I placed them all on a large plate and used a fork to mash them. The first time I made this, I made the mistake of mashing them in a bowl. Having them on a plate is better for mashing them because it’s on a flatter surface. After mashing them up (it doesn’t have to be 100% mashed), add the juice from your lemon or lime. Once mixed, chop your celery stalk into fine pieced and add to your ‘tuna’ mixture. I find that the celery adds a nice crunch to this dish. Once you have combined your chickpeas, citrus, and celery, add your vegan mayonnaise a little at a time. It is a lot easier to put more mayo than to take it out of this mix.
The recipe also calls for red onion. I haven’t tried adding that, but I am sure it would be delicious! After reaching your desired consistency with the vegan mayo, add your spices. I use onion powder, garlic powder, and all-purpose seasoning. I would recommend tasting your ‘tuna’ to see if you need to add any additional spices.
Once combined, you can put this on toast, salad, or directly on a fork! Another tasty idea is to put this inside cleaned mushroom tops or even on a piece of celery!
