No ice cream maker? No problem! This homemade vegan coconut ice cream only requires a blender and an ice tray.

If you love ice cream as much as I do, I imagine you would love to whip some up whenever you get the craving. This recipe has minimal ingredients and doesn't require an ice cream maker! If you do however own an ice cream maker, there are instructions in the recipe linked above.
All this recipe takes is:
2 cups canned coconut milk (full fat)
1 tablespoon plus 1/4 cup organic brown sugar
1/8 teaspoon salt
1 1/2 teaspoons pure vanilla extract
non-dairy milk for blending
1 ice tray (I used a silicone muffin tray)
A blender
Optional toppings (ex. Enjoy Life Chocolate Chips, cinnamon)
How to:
The first thing I did was set out the ingredients and the measuring tools on the counter. Once in front of me, I prepared this recipe in no time at all. I opened the two cans of coconut milk and poured them both into my mixing bowl. I then added the 1 tablespoon and 1/4 cup of organic brown sugar, the 1/8 teaspoon salt, and the 1 1/2 teaspoons pure vanilla extract. After mixing the ingredients together, I poured them into a glass measuring cup to easily distribute them into their freezer container.
Instead of using ice cube trays, I used a silicone muffin tray to try and better portion out my ice cream. After this step, the mixture will have to freeze for about four hours or more. I put mine in the freezer in the morning and blended them around dinner time.
This dish is better when you blend only the amount you will eat that same day, as refreezing for too long will cause the mixture to harden completely once again.
The blending process takes time, and once finished you may either eat your ice cream very soft serve as it is or put it back in the freezer for an hour or two. If you choose, like me to refreeze it, by the time it is done it will have a much thicker consistency.
This ice cream is also amazing with toppings! Some toppings I would suggest are: Enjoy Life Chocolate Chips, banana slices, chocolate sauce, chocolate chip cookie dough, and cinnamon.
